PCS Sugar Cookie Recipe

This recipe is great for cookie cutters. They hold their shape perfectly, are quick to make and they taste sensational.

3 Cups Plain Flour (loosely packed)

1 Teaspoon Baking Powder

250g Softened (not melted) Unsalted Butter

1 Cup Sugar

1 Large Egg

1 Teaspoon Vanilla Essence/Extract

  • In a seperate bowl place plain flour and baking powder and combine well with a whisk.
  • In the stand mixer with the rubber paddle attachment, cream the butter and sugar
  • Add egg and beat until light and fluffy.
  • Add vanilla and beat again.
  • Add 1 cup at a time of the flour mixture until all the flour is added and the mixture has formed a soft ball.
  • Roll mixture out between 2 baking sheets and refrigerate for 20mins
  • Cut out cookie shapes and bake cookies on 180c until a very light golden brown.
  • Excess sugar cookie dough can be rerolled and cut.
